Slavery and the Demand for Sugar

Our modern addiction to all things sweet owes much of its origin to slave labor systems on the sugar plantations of the Caribbean where Africans toiling under horrific conditions produced sugar for American and European tables. These enslaved people endured and created the dynamic cultures of today’s Caribbean societies. Explore the landscape and archaeology of the Caribbean plantation system to gain understanding of the ingenious ways in which enslaved populations managed to survive in this harsh environment.
